Anna’s Munash Mediterranean Muffins

Our Soil Sister Anna creates so many amazing things. Amongst her swag of tricks, she is an incredible cook. Nourishment and care are two of Anna’s most innate traits.

On Saturday we held our first ever gardening workshop at Munash HQ. We had so much fun. More on that next week! But for those who attended and tasted Anna’s delicious muffins they will attest how phenomenal they are.

Another of Anna’s lovely traits is that she loves to share. So here is her recipe right in time for an Easter Bake-A-Thon. And we promise her Mediterranean Muffins are super easy and utterly divine.

45g Caster Sugar
125g vegetable oil
2 eggs
190g plain flour
2 zucchinis – grated and moisture squeezed out
1 tsp bi-carb soda
1 tsp baking powder
Pinch of salt & pepper
50g grated parmesan
½ bunch thyme
30g feta – chopped
¼ cup semidried tomatoes & 12 kalamata olives chopped

• Mix the sugar, oil and eggs until combined.
• Add zucchini, flour, bi-carb, baking powder and S&P, stir until just combined.
• Gently fold through the remaining ingredients.
TOP TIP – Don’t over mix any step!
Lightly grease muffin tray or paper cups, fill each just over halfway.
Top with a little tomato or olive if you wish.
Bake in oven at 170°C for 20-25mins.
Garnish with a basil leaf and some parsley.
Note: You can add different herbs and veggies as the seasons change.
